Vegetarians have fancy brunches too

Since I moved to Augusta, Georgia some times it’s hard to find vegetarian dishes featured on the restaurant menus here. Here’s a friendly reminder, vegetarian dishes are TASTY and healthy.
These dishes can really be made any time of day.

1. California Tofu Hash

This is a substantial brunch option with ingredients that are fibrous and make you feel full- like spinach, alfalfa sprouts and potatoes. The tofu is a great protein and the avocado a healthy fat. Lastly, the spices of nutmeg and orange bring all of the components together.

2. Lentil Soup

Lentils are a great source of protein and flavor since lentils take on whatever spices you use with them. I like to use Indian spices best, and recently I even made the vegetarian broth from scratch so it was extra delicious and comforting with homemade bread.

Voila! I topped off the bread with avocado slices.

3. Dosas

You may not have heard of dosas before, they are a delicious Indian food. Dosas are made of lentil flour and served very crispy like a pancake. The inside is potato and other spices, it’s a savory favorite of mine.

4. Upma

Another Indian dish I love to make for breakfast, it’s like a savory cream of wheat with vegetables. And yes, those are fresh curry leaves!

5. Fruit Plates (served best with mimosas)

Fruit (with an alcoholic beverage) is always welcome.

6. Roasted vegetables with tzatziki pitas

Delicious, satisfying, but still light. I can never eat enough warm pitas with homemade tzatziki sauce.
