CSA FARMERS BOX INSPIRED MEALS: PART 2

This post is continuing part 1 of my meals inspired by our farmers market boxes!

3. Cabbage: I weighed the amount of cabbage we got, it was 6 pounds worth. That’s a lot! I made 3 types of recipes- napa cabbage salad, slow roasted cabbage, and Indian spiced cabbage.

First up, is the salad I made. The freshness really came through in this salad with cabbage, mango, avocado, chives, and honey glazed almonds. Delicioius all around.

Made this salad, but as I said there was a lot of cabbage to get through.

The next way I cooked the cabbage was roasted the inner cabbage for 4 hours in butter and shallots with a feta walnut dip. We also made some blanched green beans, turkey meatballs and roasted potatoes to go with it.

The last way I cooked cabbage was some Indian spices with it. My Uncle texted me instructions- heat oil of your choice (olive oil vs others), fry cumin, garlic, onion, add chopped cabbage, tumeric, enough water to steam, salt, spice (curry masala, garam masla etc to your spice level) and grated coconut.

This was by far my favorite way to eat the cabbage!

4. Eggplants: I made a hearty eggplant quinoa bowl with this ingredient, accompanied with homemade vodka marinara sauce, quinoa, kale and turkey meatballs. It was very filling and great for leftover lunches.

This homemade vodka marinara sauce is made with onion, garlic, calabrian chili paste, vodka and whole tomatoes which simmers together to build a robust flavor.

5. Turnips: I’ve had turnips before but I never realized how peppery and delicious they tasted. I found it was best to use them in fresh salads, but I loved using roasted components like crispy potatoes to add more texture to the taste.

6. Strawberries: There is nothing we love as much as fresh strawberry lemonade (with vodka for adults), in the summertime. I’ll also say fresh strawberries from a farm are smaller in size but 3x as flavorful in taste! I can’t get enough of them when they are in season.

Next summer I’ll take a picture of the actual drink! Looks like I drank it too quickly to take a picture. 🙂
